1 lb ground pork 1 lb ground lamb 1/2 cup red onion diced 1 large egg, beaten 1 tbsp salt 2 tsp ground black pepper 1 tbsp cumin 1 tbsp paprika 1 cup freshly grated Parmesan 4 garlic gloves, minced 2 tsp fresh rosemary, chopped - Combine in a large bowl - Form into large meatballs - Grill out or bake meatballs for 8-10 minutes - Place meatballs in cast iron skillet, brown on all sides on stovetop, then in oven at 425 for 10-12 minutes.

One of our favorite things to do on the weekend is make fairly elaborate breakfasts. We typically run through a list of favorites- loaded avocado toast, breakfast burritos, pancakes, crêpes, egg skillets, etcbut last Saturday night we were craving something different. We had gone out to one of our favorite spots, Zinqué, a few months ago for breakfast and I had ordered their “le breakfast bowl.” It was amazing. TJ swore he would recreate it at home, so here it is! I love crockpot meals because they are usually low in the dishwashing department. During the week, when we’re wanting to move through the post dinner routine fairly quickly it’s good to have less dishes. This past Monday I decided to try my hand at a one pot pasta dish and it was a win. Hearty and full of flavor, it was an easy, complete meal (I even snuck in some veggies).
