This morning when I got up, I decided to can some corned beef, in honor of the upcoming St. Patty's Day! My recipe is pretty simple. Sterile jars. 1/2 tsp. pickling spice per quart jar. I raw packed my trimmed beef, wiped the rim clean, & placed a lid and ring on top. Then I pressure canned at 10 lbs. for 90 minutes. Canning corned beef today was a success! Tender and juicy! It paired perfectly with some cabbage, potatoes, celery, onions and turnips!
